     Nutrition: PER SERVING

     Ingredients

•       300 g solidified spinach, (or 800g crisp spinach)

•       1 little clove of garlic

•       500 g Greek yogurt

•       sunflower oil

•       40 g raisins

    Method

1.            Place the spinach in a pan with a couple of tablespoons of water and cook over a medium warmth for a couple of minutes, or until defrosted (if utilizing solidified) and simply cooked. Remove the warmth and leave to cool.
2.            Peel and pound the garlic and blend with the yogurt, ¾ of a teaspoon of ocean salt and a liberal crush of dark pepper. Mix in the cooled spinach.
3.            Heat 1 tablespoon of sunflower oil in a little container and broil the raisins for 1 to 2 minutes, or until beginning to full up.
4.            Scatter over the spinach and complete with a shower of additional virgin olive oil just before serving.
