I have always had a soft spot for sweet potatoes, since when I was little my mother made them roasted and her sweet aroma filled the whole house. The sweet potato cake I made today is a simple and original way to serve them, and very healthy, since not carrying eggs is cholesterol-free. It also has no flour, which makes it even lighter. I like to eat it warm, but cold is just as good. I also like them as a garnish for meats or roasts, baked in the oven with their skin, and sprinkled with spices, aromatic herbs, and olive oil. A delicious alternative to the classic roasted potatoes.

     Ingredients:

  • 1 kg sweet potatoes,
  • 100 gr. sugar,
  • 1 egg,
  • 3 tablespoons fine cornmeal (cornstarch),
  • 1 orange,
  • 30 gr. peeled walnuts,  
  • 30 gr. raisins without seeds, a pinch of ground cinnamon, pinch of salt,
  • 1 tablespoon of butter.
  • Sugar icing and ground cinnamon, to decorate.


     Method

Steam the peeled sweet potatoes in pieces for about 25 minutes, or until they are very tender. Drain and reserve.

In a bowl mix the cooked pulp with the orange juice, strained, and sugar. Crush with mixer or rods until a thin dough is left. Add the egg, cornstarch, cinnamon, salt, chopped nuts and raisins. Stir well. If you want you can add to the dough a pinch of lemon zest, or even nutmeg, which combine well with the sweet taste of sweet potatoes.
Pour in greased individual flan eras, as in this case, or in a round cake mold of 22 cms., And cover with melted butter. Bake at 220º for about 45 minutes, or until cooked. Let cool and unmold. Serve sprinkled with ground cinnamon and icing sugar or decorate with citrus peel strips.
