How to cook rice Noodles?

Rice noodles  (or Rice pasta) is a type of semi-translucent pasta made from rice flour and water. Most rice pasta is very long and thin, but there are also flat ones. They are widely used in Asian cuisine. This pasta cooks really quickly and can quickly turn into porridge if they cook too long, so it's important to know how to cook them properly.

   ingredients / for 4 people

  • 400 g boneless fillet or chicken thighs
  • 200 g of noodles from rice
  • 1 cm fresh ginger root
  • 1 clove of garlic
  • 1 fresh lemongrass                                                  
  • 3 tablespoons of sauce for fish
  • 3 tablespoons of sauce of soy
  • 1 tablespoon soup of brown sugar
  • 2 tablespoons soup of oil neutral
  • some coriander leaves
  • a spring onion stalk

      Method

   1 Finely chop the lemongrass, garlic clove, and ginger. Mash everything in a mortar with fish sauce, soy sauce, brown sugar.
2 For this marinade over the chicken cut into cubes, mix, let stand for 1 hour in the fridge.

3 For lightly salted boiling water over the rice noodles. Let soak so that they soften (a few minutes are enough). Drain, season with 1 tablespoon of oil.
4 Heat the oil in a pot. When almost steaming, cook the chicken pieces with the marinade over very high heat, stirring constantly.
Note: Pour the boiling water over the pasta [3]. Unlike wheat pasta, rice pasta is not cooked in boiling water under direct heat. They must, on the contrary, be covered with boiling water and cooked outside the fire.

When the chicken pieces are cooked, add the rice noodles, coriander and chopped spring onion and sauté for another 1 minute. Serve hot.
