Heat butter
and oil in a pot. Add the onions and fry until they turn pink. Add garlic and
celery and fry for another 3-4 minutes. Add the water and when it boils, cut it
down.
It is enough that the water is gently bubbling. Cook the celery for about
25-30 minutes, until the fork becomes a thick cake. Here, the cooking time may
increase depending on the size of the celery.
If the cooking time is extended,
you can add a small amount of water.
When the
celery is tender, add apples, salt, and pepper and cook for another 15 minutes.
When both apples and celery are soft, pass them through the blender until
smooth. At this stage, check the salt and pepper and add butter for extra
taste.
This soup is
